For this recipe, we’re switching things up a little.
Instead of our usual formula of 1 tea + 1 fruit + 1 citrus + 1 herb, this recipe uses:
2 teas + 1 fruit + 1 citrus + 1 herb
And honestly? It might be one of our favorite combinations yet.
This recipe features:

The result is a cold brew tea that’s juicy, tropical, tangy, cooling, and ridiculously refreshing. Basically, summer in a bottle.
Why Use Two Teas in a Cold Brew?
Usually, one tea sets the tone of a cold brew. But blending teas lets you create more complexity and balance.
In this recipe:
- Assam Black Tea adds body, depth, and maltiness.
- Darjeeling Green Tea keeps things light, crisp, and refreshing.
Together, they create a smooth base that can handle bold ingredients like mango and tamarind without overpowering them.
Think of it like music: Assam is the bassline, Darjeeling Green is the melody.

Our cold brew series usually follows this structure:
- 1 Tea – the foundation
- 1 Fruit – sweetness and body
- 1 Citrus – brightness and acidity
- 1 Herb – freshness and aroma
For this recipe, we doubled the tea for extra depth:
2 Teas + 1 Fruit + 1 Citrus + 1 Herb
And the formula still works beautifully because every ingredient has a role to play.
Ingredients You’ll Need
For approximately 700 ml of cold brew tea:
- 7 g Kapemai Assam Black Tea (roughly 3–4 spoons)
- 7 g Kapemai Darjeeling Green Tea (roughly 3–4 spoons)
- 1 mango (around 120 g), sliced into chunks
- 15 g tamarind
- 8–10 mint leaves
- 700 ml cold or room-temperature water
How to Make This Mango Cold Brew Tea
- Start with the teas – Add the Assam Black Tea and Darjeeling Green Tea into a large jar or bottle.
- Add the fruit – Slice the mango into chunks and add it in. Cutting fruit into chunks increases the surface area, helping the flavors infuse better into the cold brew tea.
- Add the citrus element – Add the tamarind. It brings a tangy kick that balances the mango’s sweetness beautifully.
- Add the herb – Toss in 8–10 fresh mint leaves for a cooling finish.
- Pour in the water – Add 700 ml of water and close the lid tightly.
- Refrigerate for 12–24 hours – Let everything slowly infuse together.
- Strain & serve – Remove the tea leaves, fruit, and mint before serving chilled.
💡 Optional: Add honey or sugar syrup while serving if you prefer a sweeter brew.
