Welcome back to the Kapemai Cold Brew Series 🍉🍍
Episode 6 is here, and this one’s basically summer in a bottle.
If your goal is to stay hydrated, caffeinated, and mildly obsessed with tea, this recipe is your next favorite.
We’re making a cold brew tea that’s tropical, herbal, and just the right kind of refreshing, using Kapemai Assam Black Tea, watermelon, pineapple, and thyme.
The Cold Brew Formula: 1 Tea, 1 Fruit, 1 Citrus, 1 Herb
If you’re new to the Kapemai Cold Brew Series, here’s our golden formula:
1 Tea + 1 Fruit + 1 Citrus + 1 Herb.
It’s simple, balanced, and endlessly creative.
Each element adds its own personality tea, gives the structure, fruit adds sweetness, citrus adds brightness, and herbs bring that unexpected twist.
In this week’s recipe, we’re bending the rules just a little (no strict citrus!) because pineapple already has that natural tang that gives this cold brew a lively, sunny edge.
Ingredients
For 1 litre (about 4 cups) of cold brew:
- 4–6 spoons Kapemai Assam Black Tea
- 1 cup watermelon chunks (juicy, ripe ones work best)
- ½ cup pineapple chunks (for that tropical punch)
- A handful of fresh thyme sprigs
- 1 litre of room temperature water
(Optional: Add sugar syrup or honey while serving if you like a little sweetness.)
Step-by-Step: How to Make This Cold Brew Tea
- Start with the tea: Add 6–8 spoons of Kapemai Assam Black Tea to a clean jar or bottle. Assam’s strong, malty flavor forms the perfect base for fruit-forward brews.
- Add the fruit: Toss in watermelon and pineapple. Chop them into small chunks so they have more surface area to infuse flavor beautifully.
- Add the herb: Drop in a few sprigs of thyme. It balances the fruit’s sweetness with subtle earthiness.
- Pour in water: Fill with about a litre of room temperature water. Close the lid tightly.
- Refrigerate for 12–24 hours. Let the magic happen slowly.
- Strain and serve. Pour over ice and add sugar syrup or honey if you want to sweeten things up.
Why This Combo Works
- Assam Black Tea: Deep, bold, and smooth. It’s the foundation that ties everything together.
- Watermelon: Adds hydration and a soft sweetness, it’s like summer giving you a high five.
- Pineapple: Zesty and vibrant, it plays the role of both fruit and citrus in this blend.
- Thyme: A subtle, aromatic herb that elevates the whole experience.
The result? A refreshing, tropical cold brew that feels equal parts beach vacation and zen garden.
Why Use Good Tea Leaves for Cold Brew
Because good cold brew starts with great tea.
Lower-quality teas often go bitter when steeped for long hours. Loose-leaf teas like Kapemai’s Assam Black stay smooth, bold, and flavorful even after a 24-hour chill session.
When your tea leaves are fresh and single-origin, you don’t just taste tea, you taste craftsmanship.

Serve It Your Way
Serve it chilled, with a slice of pineapple or sprig of thyme for that café-style presentation. It’s a great summer brunch drink, picnic refreshment, or a mid-afternoon pick-me-up that doesn’t scream “energy drink.”
